Zucchini Gratin Recipe Ingredients: 5 tablespoons butter 1 pound yellow onions, cut in 1/2 and sliced (about 3 large) 2 pounds zucchini and/or yellow squash, sliced 1/4-inch thick (about 4 zucchini) 3/4 teaspoon kosher salt (use 1/2 teaspoon if using table salt) 1 teaspoon freshly ground black pepper 1/4 teaspoon ground nutmeg 2 cloves garlic, finely minced or pressed 2 tablespoons all-purpose flour 1 cup milk 6 tablespoons Italian style bread crumbs 3/4 cup grated Gruyere olive oil Instructions: Preheat the oven to 400 degrees F. Melt the butter in a very large saute pan and cook the onions over low heat for 20 minutes, or until tender but not browned. As the onions are cooking, stir them occasionally and work on prepping the other ingredients. Add the zucchini and cook, covered, for 8-10 minutes, or until tender. Add the salt, pepper, and nutmeg and garlic and cook uncovered for 5 more minutes, stirring often. Whisk flour into the milk and add to pan, turning up heat slightly just until milk heats and starts bubbling. Then cook over low heat for a few minutes, until it thickens and makes a sauce. Pour the zucchini mixture, and all the sauce into an 8 by 10-inch baking dish (or something close to that). Combine the bread crumbs and Gruyere and sprinkle on top of the zucchini mixture. Zucchini Pizza Bites Recipe Ingredients Serves 4 (about 60 bites) 2 large zucchini, sliced into ¼-inch thick rounds ⅓ cup tomato sauce ⅓ cup shredded mozzarella 2 tablespoons olive oil Fine grain sea salt Ground pepper Fresh basil Directions Preheat oven to 380°F (200°C). Line a baking sheet with parchment paper.Lightly coat with olive oil both sides of zucchini slices and arrange on prepared baking sheet.Season with salt and pepper and bake in the oven for 2 minutes. Take out of the oven, flip zucchini slices with the help of a fork (be careful not to burn your fingers) and bake in the oven for another 2 minutes.Take out of the oven and top with ½ teaspoon of tomato sauce and a pinch of shredded mozzarella. Shaved Zucchini Recipe Ingredients 4 medium zucchini 1 Tbsp olive oil to taste salt & pepper ¼ tsp red pepper flakes ¼ cup parmesan cheese Directions Rinse the zucchini well and cut off the ends. Lay the zucchini down on the cutting board and use a vegetable peeler to shave it into ribbons. Once you’ve shaved down to the center of the zucchini, roll it ¼ the way around and start shaving again. Repeat this until you can shave no more. Heat 1 Tbsp olive oil in a large skillet over medium heat. Once it is hot, add the zucchini ribbons. Saute, stirring carefully, until the zucchini has softened and turned bright green (about 7-10 minutes). Season with salt, pepper, and red pepper flakes to taste. Use tongs to remove the zucchini ribbons from the skillet (there will be quite a bit of moisture in the bottom of the skillet) and place into serving bowls. Sprinkle with about 1 Tbsp of parmesan cheese per serving just before eating....

Zucchini Quiche Recipe Ingredients 1 cup whole wheat flour 1 cup all-purpose flour 4 oz butter 3 zucchini (~ 21-22 oz) 2 red onions olive oil a handful fresh dill 1 1/4 cup milk 3 eggs 2-3 oz shredded Parmesan salt, pepper Directions Start my finely slice the zucchini, sprinkle some salt over and let them sweat In your food processor combine the flours and diced butter Pulse few times until it resembles fine breadcrumbs Add a little cold water to form a soft dough Roll out the dough and line a 10 inch quiche pan, put it the fridge for about 20-30 minutes. Meanwhile preheat the oven at 400F. When chilled prick the dough with a fork and cover with parchment paper and dry beans. Bake for 20 minutes. Pat dry the sliced zucchini. Finely slice the onions. Heat few tablespoons of olive oil and cook the onions until almost soft When soften add the zucchini and cook for further 5 minutes or until the zucchini start to soft Add the chopped dill and let it cool. While the pastry and the zucchini mixture are cooling slightly combine 3 eggs with 1 1/4 cup milk. Spoon the zucchini mixture into the baked pastry Pout the egg-milk mixture over and sprinkle with the shredded cheese. Zucchini Gratin Recipe Ingredients: 2 small zucchini (about 1 lb) 1 onion, finely chopped 2 cups whole milk 1 cup fresh bread crumbs 3 eggs, beaten 3/4 cup Parmesan cheese 1/2 cup uncooked white rice 1 teaspoon salt 1/2 teaspoon pepper 2 teaspoons fresh thyme Extra-Virgin Olive oil Directions: Preheat oven to 350 degrees. Coat a 6 cup gratin dish with olive oil. Set aside. Sauté the onion over low heat until soft, but not colored. Slice the zucchini coin thin and then add to the onions and sauté an additional 2-3 minutes. Set aside. In a large bowl, pour 1 cup of the milk over the bread crumbs; add a splash of olive oil, eggs, thyme, 1/2 cup cheese, salt and pepper. Stir until combined. Add the onion zucchini mixture and rice. Pour into prepared gratin dish. Smooth the surface and pour the remaining 1 cup of milk over the top. Sprinkle with remaining cheese. Bake, uncovered, for one hour or until golden on top....

In a small bowl, mix together the bread crumbs, salt and pepper. Then in a separate bowl place the egg whites. Dip zucchini slices into the egg whites, then coat with the breadcrumb mixture.
