Balsamic Glazed Steak Rolls Ingredients: For the steak: 1 1/2 – 2 lb skirt steak/ 8-10 thin sliced sirloin (flank steak or thin-sliced top round also works) Salt & Pepper, to taste 3 tablespoons Worcestershire sauce Your favorite steak seasoning 1 tablespoon olive oil For the filling: 1 carrot 1 bell pepper 1/2 a zucchini (depending on size) 5-6 green onions 2 cloves of garlic 1 tsp Italian herb seasoning For the glaze: 2 tsp butter 2 tbsp finely chopped shallots 1/4 cup balsamic vinegar 2 tbsp brown sugar 1/4 cup beef broth Directions: To prep the steak: Trim any fat and cut the steak into 3 by 5 or so inch wide pieces. Tenderize the meat with a meat hammer if necessary (our top round did not need tenderizing since it was already so thin, but flank might). Season the steak pieces generously on both sides with salt, pepper and worcestershire sauce. Marinate for at least two hours. To prep the filling: Chop up the carrot, bell pepper and zucchini into matchstick size pieces, a little longer than the width of the steak strips. Peel and crush the garlic with the flat of a knife. Steak Fajitas on the Fly Recipe Ingredients: 1 lb beef sirloin steak, cut across grain into thin strips 2 limes 1 teaspoon ground cumin Salt 2 poblano chiles, stem and seeds removed, thinly sliced 3/4 cup sour cream 2 tablespoons Old El Paso™ chopped green chiles (from 4.5-oz can) 8 Old El Paso™ flour tortillas for burritos (8 inch; from 11-oz package) Directions: In medium bowl, combine beef with juice from 1 of the limes and 1/2 teaspoon of the cumin. If desired, season with salt. Stir to coat beef; set aside. Heat 10-inch cast-iron skillet over medium-high heat until it starts to smoke. Reduce heat to medium-low. Add poblano chiles; let cook without stirring 1 minute. Stir; cook 1 minute longer or until chiles are slightly charred and begin to soften. Remove from skillet; place in covered bowl to keep warm. Bacon Cheeseburger Bombs Recipe Ingredients: 1 can (16.3 oz) Pillsbury® Grands!® Flaky Layers refrigerated original or buttermilk biscuits 1 lb lean (at least 80%) ground beef, cooked or 16 frozen (thawed) cooked meatballs 1 block (8 oz) Cheddar cheese, cut into 16 cubes 16 slices bacon Long toothpicks or skewers Canola oil for frying Directions: Separate dough into 8 biscuits. Cut each biscuit in half; press with hands into circle about 3 inches in diameter. In center of each biscuit round, place 2 tablespoons cooked ground beef (or 1 meatball) and 1 cube of cheese. Wrap dough to completely enclose beef and cheese; pinch seams to seal. For the Fried Version: Wrap each stuffed “bomb” with 1 bacon slice; gently secure loose bacon with toothpick by inserting it through bacon and halfway into “bomb.” In 3-quart heavy saucepan or deep fryer, heat oil to 350°F. Fry stuffed “bombs” 4 to 5 minutes or until dough is golden brown on all sides. Place on paper towels to cool. Repeat with remaining “bombs”. Serve warm with ketchup and mustard, if desired. While noodles cook, heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add steak; sauté 5 minutes, browning on all sides. Remove from pan; cover. Add the ground beef, crumbling as you put it in the skillet. When lightly browned, add the onions, red bell pepper, tomatoes, garlic, and all the spices.
