Quinoa and Fruit Breakfast Bowls
Ingredients

2 cups water

1 cup quinoa
-
1/4 cup apple juice or cider

3 tablespoons reduced-fat creamy peanut butter
-
1 small banana, chopped
-
2 tablespoons raspberry or strawberry spreadable fruit
-
4 teaspoons unsalted, blanched peanuts
Instructions
- In a medium saucepan combine the water and quinoa. Bring to boiling; reduce heat to medium-low. Cook, covered, for 10 to 15 minutes or until water is absorbed. Remove from heat. Add apple juice and peanut butter, stirring until combined. Stir in banana.
- Divide mixture among four bowls. Add a spoonful of spreadable fruit to each serving; top with peanuts.
